It all started with a gift and a love of beer. Mike and I love beer, so I decided to give him the gift of a home brewer's kit. Once we started brewing, we decided to try to perfect recipes that incorporate all of the qualities we love in beers. We see this venture as an opportunity to bring our community together. We envision this as a place where people can relax, eat good food, drink great beer, and laugh with great people.
About the Name: Two Jacks Brewing Company is named after two great men that were influential in our lives...our grandfathers. Yes, both of our grandfathers are Jacks. Since they have both brought us much support, love, and life lessons, we decided that our love of brewing should be named in their honor. Mike's grandpa Jack was a Hollywood and stage actor who could be seen on many television shows of the 1970s and 1980s. He was also one heck of a poker player! Unfortunately, he is no longer with us. Beth's grandpa Jack was a master mason; his work can be seen around the Long Beach/Lakewood areas (e.g., CSULB, LBCC, houses on 1st St, etc.). In fact, her first job was helping her grandpa mix cement. Her grandpa is a WWII veteran and lives in Northern California. Did we mention he built his home from the ground up at 70? We feel the name Two Jacks honors these great men and builds a great foundation for our brewery. The Brewers: Mike--He is the man in charge of all things stainless steel and mechanical. Mike built our RIMS tube and created our Beer Bot fermenters. He is also a master of sanitation...he keeps all of our brew equipment and lines squeaky clean. He's also our master tinkerer and great at fixing our equipment on the fly. Mike's also behind all of our beer names. Beth--She is the woman in charge of the brews. Beth creates all of our recipes and is the head brewer. We strive to have a variety of beer to drink, and Beth does all of the research on grains, hops, water profiles, and yeast. She's the mistress of lists and keeps tabs on every aspect of the brew process from pH, SG, fermentation schedules, and brewhouse efficiency. |
